Looking for a way to set the time for the plugin. The day is showing as tomorrow. Assuming it is defaulted to GMT but I need Pacific +7…

either the time on your webserver is off, or the date zone is not set in php.ini. You need to correct this.
It is set correctly in the General settings page. I am kinda confused here. Once again I apologize about my noobish ways on this.
Check your web hosting account. It may run CPanel or a similar GUI. The web server itself (well beneath the WordPress / EME interface and General Settings) maintains the real clock, and the php.ini file needs to be edited from either your web host’s file management interface or the command line.
