I wonder if you have come across this issue before. I’ve been using the EME plugin for about 5 years now and it has always worked excellently.
Just this last few days, my website has encountered a 504 Gateway Time-out error whenever I try access it.
When I go to the WordPress dashboard and disable plugins, the website works fine as soon as I disable the EME plugin. Nothing else has changed, I’m wondering if this is something you’ve experienced before.
I should say the theme is not an issue, as I’ve tried it with other themes and it still returns the Gateway error, so I don’t think there’s any conflict

In EME I’m trying my best to be as low-resource usage as possible, while still being able to handle thousands of events. Do you have a huge homepage with events on it? Or is the homepage not even EME related? How many events do you have etc … ?

I appreciate that. The website has quite a lot of events. Currently displaying 25 events in a basic list format on the homepage.
It seems to occur only for a couple of hours each day. Could be the server is being overloaded at those times.

25 events are nothing … I think you should indeed contact your hosting provider here.
