    How/where do I change the text and color of the error messages (eme-rsvp-message – missing entry for a field, no more bookings available, etc…) shown above the form?

    That’s just done via CSS, see the CSS id for that message: eme-rsvp-message

    Sorry, but changing that becomes dangerous, because it needs to cover all cases.

    But: you have a filter that you can use to change the generated html completely to your liking:

    eme_add_booking_form_filter and eme_delete_booking_form_filter
