When we receive a notification email that an event has been booked, it comes from my default WordPress email address.

How can I use the email address on the form as the FROM email when we get notified of a new booking?

Not possible via the current code, even some mailservers might consider this spam (mail from external domain sent via their webserver)

If you want to see the sender in the message, please use the mail format settings for this.
